Whole-Grain Cornbread

1 cup whole wheat flour
3/4 c whole grain cornmeal (I like Bob's Red Mill brand)
2 tsp baking powder
1/4 c honey
1/4 c canola or olive oil
1 cup skim milk
1 egg
1/2 tsp salt (optional)

Heat oven to 400 degrees. Grease 8 or 9 inch pan.  Doube recipe to make 9x13 pan. Mix dry ingredients, stir in the rest of the ingredients, and bake 20 to 25 minutes until golden brown and wooden pick comes out clean in center.
