Brown Rice Pudding

2 cups of cooked brown rice (cook it longer than usual, if possible so that it will be soft)
1 1/2 cups skim milk
2 beaten egg whites
1/2 cup raisins
1/2 tsp cinnamon

Cook the above over medium heat, stirring occasionally until your mixture thickens well.  Then add:
1-2 tsp vanilla
Stevia to taste (I added 2-3 tsp, but everyone's sweetness level is different.  My advice is sweeten and taste)

I had this cold with 1/4 cup skim milk for breakfast this morning and it was awesome!
