I thought I would share this recipe with all of you because I am trying to incorporate feeding my family this diet too. There are just some things you don't mess with at our house and that is on Friday nights we have pizza and a movie. So here is the vamped "lose to win" version.
Whole Wheat Pizza Crust
1 1/4 C. Hot Water
2 TBSP. Rapid Yeast
1/4 C. gluten
1 tsp. honey
2 1/4 C. Whole Wheat Flour
1 tsp. salt (optional)
Put water in bowl first then add the yeast. Then add the rest of the ingredients. I just mix this in a bowl with a big wood spoon when it is combined knead it about 10 times with your hands. Let rest in the bowl for 15 min. I put a little olive oil on a paper towel and spread around a big cookie sheet. You can roll it out first on your counter but I just dump it in the cookie sheet and roll it out (from the middle-then out) until it covers the cookie sheet. It will be a thin crust but it is surprisingly good!
Toppings:
Drain and rinse pinto beans then put in a food processor and grind. It is ok if you have some chunks then add about 2 tsp. of taco seasoning. This will cover 1/2 of the pizza and then just sprinkle some mozzarella cheese on top. When it comes out we add tomatoes, lettuce, cilantro and salsa for a YUMMO taco pizza.
Canadian bacon, Feta Cheese and Pineapple is yummy too.
