Herb Baked Fish

Cook Time: 15 minutes
Total Time: 15 minutes
Ingredients:
•      1 pound frozen fish fillets – I used Tilapia
•      1/4 cup chopped onion
•      1 clove garlic, minced
•      2 tablespoons olive oil
•      1/2 teaspoon dried tarragon, crushed
•      1/4 teaspoon dried thyme, crushed
•      1/4 cup bran flakes, crumbled
•      Salt and pepper, to taste

Preparation:
Place fillets in greased baking dish. Cook onion and garlic in butter until tender. Stir in seasonings, cook 1 minute longer. Spread mixture over the fish fillets. Top with cornflake crumbs. Bake at 450° for 12 to 15 minutes, until fish flakes easily with a fork.  Salt and pepper, to taste.
Baked fish recipe serves 4.
