Pumpkin Pancakes

1/2 C pumpkin puree
2 T unsweetened applesauce
1 egg
1 C milk

Mix together and add:
1 packet Stevia
1 t. baking powder
1/2 t. salt
1 C. whole wheat flour
Cinnamon, cloves and nutmeg to taste. (Or pumpkin pie spice)

Mix together and cook on a warm griddle.

Pumpkin Pancakes

Pumpkin Pancakes Servings: 2
1/4 c oat flour
1/4 c ww flour
1 tsp baking powder
1/2 tsp pumpkin pie spice
1/4 tsp salt
1/2 c skim milk
1/2 c pumpkin puree
2 large eggs, separated
2 Tbls olive oil
1/2 tsp vanilla extract

Instructions
1. In a large bowl, whisk together the dry ingredients.
2. In separate bowl, mix wet ingredients till smooth.
3. Combine wet and dry ingredients, mix until just combined.
4. Beat egg whites until thick and stiff.
5. Gently fold egg white mixture into batter.
6. Spray pan with cooking spray and heat.  Drop about 1/4 increments of batter into pan and cook pancakes.

Oatmeal Blueberry Pancakes


Ingredients:
4 cups skim milk
1/2 cup coconut oil
1/2 cup flax seed mixture or 2 eggs
3 tablespoons honey

Mix together above ingredients, then add:
2 cups whole wheat flour
2 cups rolled oats
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
one cup blueberries
Cook on a griddle sprayed with cooking spray.  Top with "Simply Fruit" spread.

Keely's Pancakes

I have attached a recipe that my daughter uses for her 3-yr old who doesn't like to eat. How I wish I had that problem.... They are really good!
1 c whole wheat flour                   1 c milk
1 t baking powder                        1/2 mashed banana
1/4 t salt                                       2 T applesauce
1 egg well beaten

These make about 8 - 5" pancakes.

Delicious Whole Grain Pancakes

Ingredients:

1 2/3 cup whole wheat flour
2 cups oats (ground in blender to powder)
1/2 cup ground flax seed (ground in blender)
1 1/2 tsp baking powder
1/2 tsp baking soda
2 tbls honey or agave
1 tsp salt
3 tbls olive oil
2 1/2 cups skim milk
2 eggs beaten

Mix all ingredients then cook on hot griddle.
