Potatoes and Asparagus

Potatoes and Asparagus
3 large red potatoes, scrubbed and diced into bite-sized pieces
2 TBSP. olive oil
3/4 tsp. Sea Salt
1 tsp. dried rosemary
1/4 tsp. black pepper
1/2 of a large yellow onion, sliced
2 cloves garlic, minced
10 oz. baby asparagus spears, fresh or frozen and thawed, cut into 2-inch pieces
1/4 C. pine nuts or almonds
1/3 C. parmesan cheese

Combine potatoes, olive oil, salt, rosemary, pepper, onions, and garlic in a bowl.  Toss to coat.  Spread mixture evenly on a cookie sheet and bake at 450 degrees for 15 to 18 min.  Add the asparagus, pine nuts, and Parmesan cheese, if desired.  Mix and return to oven for an additional 10 min.




Oven Baked French Fries

4 medium potatoes, scrubbed and sliced lengthwise (with skins on)
3 TBSP. Olive oil
1 tsp. Salt
1/4 tsp. garlic powder or you can just put garlic cloves and onions right on the baking sheet. 

Slice potatoes and rinse well in a colander (to rinse the starch off) Drain them well and pat dry with a paper towel.  Combine potatoes and oil in a medium sized bowl and toss to coat.  Season with garlic powder and salt or I just put them on a cookie sheet in a single layer and put onion pieces and garlic all over (the flavors infuse into the potatoes).  Bake at 350 for 40 to 50 min.  or you can crank it to 400 and its about 15 min.  (I am extremely impatient when I'm hungry! :o)

Mashed Potatoes A la Melissa

Boil potatoes, strain

Add some cream cheese, I used the 1/3 fat kind

Cut up and add some chives. Mix in a little skim milk and mashed them up.

Really easy, really good!

Sliced Baked Potatoes

Ingredients:

4 Medium even potatoes
1 tsp Sea Salt
2 tbsp olive oil
2-3 tbsp Chopped fresh  parsley, chives, thyme and sage
1 1/2 tbsp Parmesan cheese

Preparation:

Peel potatoes if skin is tough. Otherwise, just scrub and rinse them. Cut potatoes into thin slices but not all the way through. Use handle of a spoon to prevent knife from cutting all the way. Put potatoes in a baking dish and fan them slightly. Sprinkle with salt and drizzle with oil. Sprinkle with herbs. Bake at 425 degrees F for about 50 minutes. Remove from oven and sprinkle with cheese. Bake for another 10-15 minutes until lightly browned and potatoes are soft on the inside. Check with a fork.

Farmer's Casserole

3 cups shredded hashbrowns
1/2 onion diced
1/2 cup low fat shredded cheddar cheese
3 slices crumbled turkey bacon
6oz skim milk
4 egg whites and 1 yolk

Spread hashbrown in glass baking dish sprayed with pam.  Sprinkle cheese, onion, and cooked turkey bacon on top.  Beat eggs and milk together and pour over other ingredients.  Bake at 350 for 45 minutes.  Serves 8.

Crispy Skins

Collect your potato skins and use them in this crispy recipe.

3 T Almondaise ( found in Misc. label)
1/2 T nutritional yeast flakes (found in Misc label)
2 c potato peels, raw or cooked; or the skins of 6-7 medium sized potatoes

1.  Preheat oven to 350 degrees
2.  Stir together first 4 ingredients in a medium bowl.
3.  Add peels and stir thoroughly to coat all.
4.  Spread peels on a cookie sheet and bake until browned and crispy.  15-20 minutes for cooked skins, 30-35 for raw.

Healthy "Funeral" Potatoes

6-7 baked medium russet potatoes
1/2 c finely chopped green onion
1 1/2 c Almondaise (see recipe in Misc. label)
1/3 c nutritional yeast flakes
2 t sea salt or to taste
1 1/2 c water
1 1/2 T onion powder (I didn't have this so I used dried onion)
1 1/2 T EACH of lemon juice and raw apple cider vinegar
2-3 T grated butternut squash, for color, optional (I didn't do this.  I sprinkled 2 tsps of vegetable powder over the top instead)

Preheat oven to 350 degrees.
Grate potatoes in 9 x 13 baking dish and set aside.  Set peels aside for another use (there is a "crispy skins" recipe You can use these for)
Mix all ingredients besides vegetable powder together then mix gently with the potatoes.  Sprinkle vegetable seasoning on top if desired.

Bake for 15-20 minutes.

You could also try a whole grain cereal (like Total) crumbled on top and drizzled with olive oil.  This really isn't necessary though.  It was really yummy without it.

Hamburgers and Fries!

Healthy Hamburgers

 l lb. lean ground turkey and l lb. extra lean ground beef.  Mix them together then added one onion soup mix packet and form into hamburger patties.  My family ate them with whole wheat buns; I didn't have a bun, but put tomatoes and lettuce with it. 

Healthy Fries
Cut your potatoes in French fry strips.  Coat cookie sheet with cooking spray and place potatoes on sheet.  Season with salt (other seasonings can be fun too) Bake at 400 ยบ.  Watch closely and turn to make sides crispy.  You can also do this on the stove top with a small amount of olive oil.  It just depends on your fat allotment.

Personally, I love the yam fries (sweet potato)!  Follow the same above instructions. 
Last night I made two separate batches, one with Idaho potatoes and one with yams.  Both got slicked up.     Serve with a BIG SALAD!!
