2 egg whites
1/3 cup Italian seasoned breadcrumbs
4 T reduced-fat parmesan cheese, grated, divided
2 portions chicken breast (about 1/2 lb)
2 portions spinach pasta (about 4 oz uncooked)
1 C low-fat pasta sauce
2 C baby spinach leaves

Heat oven to 400 ยบ. Mix breadcrumbs and 2 Tbsp of cheese on plate. Dip chicken breast in egg whites and then into the breadcrumb mix, coating both sides. Place on oiled/sprayed pan, Bake approximately 12 min and turn, cook approximately 12 more min. Serve with cooked pasta, warmed sauce and remaining cheese.
