I am not the most ambitious cook in the whole world but I do love stuff that is simple, easy and delicious. You can probably use different veggies in this but I absolutely love asparagus, but not so much a lover of seafood.1 Tilapia Filet (I buy mine frozen at walmart cheap!)
10-16 Asparagus Spears (I buy mine frozen from the Schwann's man when in the off season)
3 Lemon slices, sliced pretty thin
Dill Seasoning
Kosher Salt
Preheat oven to 400 degrees.
Pull out a piece of aluminium foil, place your tilapia filet (frozen) onto the foil. I sprinkle a bit of water on to the fish then I sprinkle dill (You can use fresh if you have it I just never do) and kosher salt on the filet. Then put your thinly sliced lemons on top. On either side of the fish, put your asparagus in. Usually I have about 5-8 pieces on each side depending. You can put kosher salt on this as well. Fold up the aluminium foil around the filet and veggies (like a tinfoil dinner). Put on a small baking sheet or pan and cook for 20-25 min. (The timing on this might be different cuz I have a convection oven that I use to speed up the process. Just adjust for your oven.) The fish steams in there and you get this yummy flaky fish that is NOT overpowering. For a seafood hater like me! :)
