2-4 Chicken Breasts
Boil your chicken in a large pot of water. You can do this later in your broth as well, I don't like all the frothy stuff it leaves behind so I do it seperate.
1/2 Yellow Onion (chopped)
1 Red Pepper (chopped)
1 Can diced Green Chiles
1 tsp. minced garlic
1 tsp. Olive Oil
While your chicken is cooking, take a large sauce pan add olive oil and the vegetables.Saute until edges are lighty brown and the vegetables are crisp tender.
To the sauce pan Drain and add:
1 Can Kidney Beans
1 Can Black Beans
1 Can Pinto Beans
1 Can Corn
Mix and let simmer for just a few minutes.
Take the pot you boiled your chicken in and add 4-6 cups chicken broth.
Pour in your vegetable and bean mixture and your chicken cut into pieces.
Add:
1 1/2 tsp. Cumin
1 tsp. Onion Powder
1/2 tsp. Pepper
Let simmer 10 minutes then add:
The Juice of 3 Limes
1/2 a bunch of coarsley chopped Cilantro
Garnish with a wedge of Lime, and Avocados.
Cheese and Tortilla chips are also very good you just have to be careful with those:)
