2 Chicken Breast
2 Zucchini Sliced
2 Roma Tomatoes diced
2 Green Onions Chopped
Take a large sheet of tin foil and lightly spray it with cooking spray. Place the chicken on the tin foil spread 1/2 Tablespoon of Pesto (Found in *Sauces*) then Layer the zucchini, tomatoes, onions on top. Spread 1 or 2 Tablespoons of Pesto on top. Cover with tin foil (like a tin foil dinner) Place in a baking pan and bake for 25-30 or until the chicken and vegetables are done. 400 degrees.
This was really yummy. The pesto is pretty strong so you might want to use a little less than called for.
